My (currently) favorite homemade trail bar

Today I made a batch of my currently favorite trail bars. They are tasty and require no cooking.

I know they look kind of like turds but that keeps the uninformed from stealing them :) You can form them into a more spherical shape if you like.

Coconut Peanut Butter Energy Balls

Ingredients

Directions

Soften peanut butter and honey/syrup in glass mixing bowl for 10-12 secs in microwave.
Combine all ingredients in a mixing bowl until well combined. The tricky part is achieving the proper consistency so that they just adhere when formed into balls. The above proportions worked best for me, but you might start with 1/2 cup peanut butter and add dollops until desired consistency is reached. Note that the best consistency doesn't really stick together in the bowl but will stick together when pressed into balls.
Roll into the size balls you prefer. You can also use an ice cream scoop to form them. Wrap in wax paper and store in the refrigerator.

Yield: About eleven balls.

Variation 1:

Soak overnight 1/8 cup whole chia seeds in 1/4 cup almond milk. Use this instead of chia seeds. Produces a slightly stickier mix that conforms better. Note this is only half the original amount of chia seeds. The result gives softer seeds that don't stick in your teeth quite as much but still more than ground.
